I really enjoy laughter, warmth, games, sparkling cider and good food. I thank God for the holidays!
This year we made rather merry with a Southern-style yet mostly gluten-free Thanksgiving menu:
Trader Joe's GF Stuffing - Casserole Style
Baked Macaroni & Cheese (with Chickpea Pasta) - Aunt CG's secret recipe
Mashed Potatoes w/sour cream & butter (with proper potato prep inspired by these)
Slow-Cooked Collard Greens with brown sugar and smoked turkey leg (inspired by FN)
Roasted Green Beans with Garlic
Baked Sweet Potatoes (simple and plain :) )
TJ's Cranberry Sauce
Heinz Turkey Gravy
Pumpkin Pie (Whole Foods!)
Danish Kringle (TJ's!)
Chocolate Mini Bundt Cake (Atwater's)
Chocolate Chip Cookies w/ buckwheat flour (courtesy of R.S!)
I really like to cook (and eat) and although I don't take a lot of time for elaborate things during the regular semester, on the holidays it is fun to take a moment for what feels like the preparations for a great feast. Although we did have a bit of a turkey mishap that resulted in a late night call two time zones away to my brother and sister-in law for consultation and a do-over (lol), I was super excited that things turned out well and were given the stamp of approval multiple times by my sister, who is a foodie and cook in her own right.
Our Thanksgiving playlists were pretty varied, but as dinner approached, we listened to hymns of thanksgiving on a sweet holiday playlist. With what seemed like perfect timing and the ushering in of the holiday season of thanksgiving and the pending start of Advent, we finished setting up and sitting down for grace right at the conclusion of Kings Kaleidoscope's "All Glory be to Christ". Amen!
After dinner, we dimmed the lights and topped it off with tea & dessert and a double-feature of Pride & Prejudice and A Christmas Carol, with our first strand of Christmas lights shining in the background.
Fun times and a great holiday. Praise the Lord, everyone, and hope you had a Happy Thanksgiving!
